Its secrets were recorded for posterity in the 14th-century cookbook El llibre del Sent Soví, the oldest surviving culinary text written in Catalan. This is a vegetable-rich, hardy fare that features aubergine (eggplant), chunky garlic (Aoli), wine and tomato sauces, fresh pasta, honey, ginger and wild herbs, decorative bread, and liberal olive oil.
Luscious desserts are rich in fresh, creamy goat or cow's milk. And, of course, there is nouvelle French cuisine notable for its delicate sauces and sumptuous desserts like profiteroles and creme brûlée!.

Learn the art of authentic Catalan and classic French cuisine in Vernet les Bains, where orchards are heavy fruits and nuts, and colorful vegetables are harvested from village gardens.

Cook strictly organic vegetarian (even vegan) dishes or meat and seafood fare with vegetables and fruits grown in village gardens and orchards; seafood from the nearby Mediterranean, and meat from local farms practicing free-range, humane methods.
